Lemon Custard

Ingredients

Zest of 2 lemons

7 T. Lemon juice

1/2 cup melted butter

1 cup sugar

4 eggs

Directions

Set up a double boiler or improvised double boiler.
Put your ingredients into the bowl, whisk together, then turn the heat on low.

Whisk continuously, cooking until very thick. If at any time the water starts to boil, turn the heat down or off temporarily.
Pour into pre-made shells or ramekins and allow to cool. Sprinkle with powder sugar, or if in ramekins- add crunched up shortbread cookies.
